POPSUGAR Must Have Box Review: July 2017

Good Morning and Happy (Ugh…) Monday! I hope you all had a sensational weekend. Mine was very relaxing- although I’ll get to that a little later on this week. For now, I want to share my July POPSUGAR “Must Have” box with everyone! It arrived early last week and I couldn’t wait to open it up and take a look inside.

I had actually wanted to get this post up this past Friday, but a Thursday evening dinner with my brothers at my mother’s house ran a little later than expected- and coupled with putting in some serious overtime at my job and a spur-of-the-moment Friday evening event that came up unexpectedly at the last minute- I got a little delayed on my usual posting schedule.

But enough excuses! It’s a brand new week and I’m back and ready to write!

July’s “Must Have” box was a little different from past boxes I’ve received, in that it did not have any coupons/online bonus cards included and the monthly pamphlet that detailed each item and brand featured in the collection was missing. Whether or not POPSUGAR simply forgot to pack it in whatever unit my box fell into or scrapped it all together this month will forever remain a mystery- but I found myself looking for them after I’d unpacked everything!

A quick online search shows that this month’s theme/inspirations were FIREFLIES, BONFIRE, CAMP, SAND and FIREWORKS.

The first item that caught my eye were these fireplace matches from Sisters of Los Angeles that came in the prettiest box ever. We all know how much I love California (enough to journey out there for 24 hours at a time just to be under the palm trees for a day!) so I know that when I’m done using these matches on my scented candle collection and in my backyard fire pit- I’ll be preserving the box to use as something decorative around my place as a reminder of my home away from home!

Not only does Tarte Cosmetics make my favorite foundation (the “Rainforest of the Sea” water foundation gives me life)– but they also make one of my favorite waterproof mascaras, too- so to receive a full-sized tube of it in this month’s “Must Have” box was a really pleasant surprise!

“Lights, Camera, Splashes” makes my eyes pop something fierce. It thickens, extends, and slightly curls my lashes- and the formula doesn’t budge- not even with sweat, rain, salt water, etc. I’ve been using it for a long time now, and this replacement tube just saved me $23 at my next Sephora shopping trip since I won’t need to replenish my supply!

Hi, I’m pasty and I can never have enough sunscreen- especially when a good chunk of my free time is spent outdoors and at the beach. I’ve been loving this SPF50 mousse formula from Supergoop because it applies easily and evenly (and you don’t need a ton of it to get good coverage!), it isn’t oily/greasy on my skin- and it’s not loaded with harmful chemicals or weird fragrances or anything.

The sunscreen is naturally moisturizing and the antioxidant-charged formula has it’s own clean scent that actually makes the application process a lot more enjoyable than other brands I’ve tried in the past that have left me with uneven burns/tan lines or breakouts!

I’ve been making it my Summer mission to drink more water- not only to make sure I’m ridding my body of toxins and keeping my skin hydrated and clear- but because it has been really, really hot out lately, y’all! Getting into my car after a long day of work and knowing that it’s going to take a few minutes for the AC to kick on and offer me some relief is enough to send me into a full blown meltdown (no pun intended.)

I’ve been loving this 20-ounce tumbler from Bando since I received it. The design reminds me of something you’d see at any local beach that has refreshment stands- and I can just load it up with ice water when I hit the road every morning and know that I’m packing plenty of H2O to get me through the day!

One of the items I knew I was going to be receiving this month was this plush, 100% Turkish cotton Ocean Tribe towel by Turkish T– and it is by far my favorite item in July’s “Must Have” box. The towel is pretty big- enough to bring to the beach or the pool and be able to lay on it comfortably- but it is also SO. INCREDIBLY. SOFT. Think of the softest thing you’ve ever touched and then amplify it by 10,000 and that is how soft this towel is.

A $49 value- this item is all mine- as in I’m not sharing it the way I do with some of my other POPSUGAR gifts. The pattern and colors on this towel are lovely, so showing it off is not a problem at all. It’s divine!

Finally, a POPSUGAR box just isn’t complete without a snack- and I’m packing these smoked gouda cheese crackers from Snyder’s with me when I head to work tomorrow. They’re baked and low in fat, so I don’t think I’m going to feel too guilty if I end up eating the entire bag in one sitting before my lunch break.

Overall, I really enjoyed everything included in this month’s collection- although I am still a bit perplexed at the cards/coupons being M.I.A. this time around. It’s not the end of the world, of course- but I think I got so used to having them every month!

I’m looking forward to August’s box- although that means it’ll be the last one of the Summer!

Comfort Food: Buttermilk Skillet Cornbread with Tomatoes and Green Onions

Good Morning and Happy Monday, everyone! I know it’s pretty hot around here lately (and probably everywhere else, too!) but I’ve got another skillet recipe for you all if you can stand a little extra heat in your kitchen for about 30-45 minutes. I promise that it’ll be worth it, though. This recipe is a good one!

I love cornbread- especially when it’s homemade and served hot- but sometimes it can taste a little dry or bland all by itself. When I saw this slightly modified version, which loads up the classic recipe with a couple of different flavors and textures in the form of some unexpected vegetables instead of just corn kernels- which I’ve seen done in the past- I knew I had to give it a try.

I served this as a side dish with a meal I prepared for friends this past weekend as a substitute for standard dinner rolls, and it went over really well!

WHAT YOU’LL NEED:

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 3 tablespoons sugar
  • 1½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 5 tablespoons unsalted butter, melted and cooled slightly
  • 2 large eggs
  • 1 pint assorted cherry tomatoes, halved
  • 1 bunch scallions, cut into 1-inch pieces
  • 1 tablespoon extra-virgin olive oil
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper

READY? HERE’S WHAT YOU DO:

  1. Preheat the oven to 400°F. Lightly grease an oven-safe 9-inch skillet with nonstick spray.
  2. In a large bowl, whisk the cornmeal with the flour, sugar, baking powder, baking soda and salt to combine. Make a well in the center and add the buttermilk, cooled melted butter and eggs; whisk well.
  3. Pour the batter into the prepared skillet and smooth into an even layer.
  4. In a medium bowl, toss the tomatoes with the scallions, olive oil, salt and pepper to combine. Pour the tomato mixture on top of the corn bread batter.
  5. Bake until a toothpick inserted into the center of the corn bread comes out clean, 25 to 30 minutes. Let cool at least 15 minutes before slicing and serving.

This cornbread was rich and that m word that ends in “oist” that I refuse to say because it’s one of the worst words in the English language- but this WAS that word. The onions and the tomatoes were also still juicy after cooking this up and gave each bite some additional flavors that were much-appreciated. I’d like to try making this again and maybe add some green peppers to the recipe, as well.

I had a small amount left over that I’ll be enjoying for a mid-morning snack in a couple of hours, since this cornbread is appropriate for any time of day!

Backyard BBQ Recipes: Skillet Pasta with Summer Squash, Ricotta and Basil

I love ricotta- so much that I’d probably eat it straight out of the container with a spoon if I knew I wouldn’t hate myself afterwards- and I also love summer squash, but up until now I hadn’t really discovered a recipe that combined the two in a way that was both delicious and filling. I finally came across this skillet recipe via PureWow recently and knew I had to try my hand at cooking it up for one of the recent cookouts I attended over my Fourth of July weekend.

Loaded with different flavors and textures- I had a feeling this was going to be a crowd-pleaser before I’d even finished preparing all of the ingredients!

If you’ve got 30 minutes- you can make this, too. It’s quick, easy and perfect for a last-minute meal idea- especially if you’re feeding a lot of hungry people!

WHAT YOU’LL NEED:

  • 1 pound pasta (like penne or rigatoni)
  • 2 tablespoons extra-virgin olive oil
  • 1 sweet onion, thinly sliced
  • 3 garlic cloves, minced
  • 2 summer squash, thinly sliced
  • 1½ cups halved cherry tomatoes
  • Salt and freshly ground black pepper
  • ⅓ cup finely grated Romano
  • 1 cup ricotta cheese
  • ¼ cup chopped fresh basil

READY? HERE’S WHAT YOU DO:

  1. Fill a large skillet with water and salt it generously. Bring it to a boil over high heat. Once it’s boiling, add the pasta and cook according to the instructions on the package.
  2. Drain the pasta and set aside, reserving ¾ cup of the pasta cooking water.
  3. In the same skillet, heat the olive oil over medium heat. Add the onion and sauté until tender, 4 to 5 minutes. Add the garlic and cook until fragrant, 1 minute more.
  4. Add the squash and tomatoes, and cook until both are tender, 4 to 5 minutes. Season with salt and pepper.
  5. Add the reserved pasta water to the mixture and toss well to coat, then add the pasta and stir. Sprinkle in the Romano and stir again to combine.
  6. Dollop the ricotta on top of the pasta and garnish with basil. Serve immediately.

I admit, I used a little more ricotta than what was needed in the recipe- but I don’t regret it. This dish was delicious and filled me up in just one serving- and there was even enough left over to re-heat the following day for lunch (and it was just as good re-heated, too- which rarely happens!)

You can play around with the vegetables included in this one to better fit you or your guests’ preferences- but I liked it just the way it was and I know I’ll be making this one again!

Backyard BBQ Recipes: Mexican Street Corn Dip

When I was a kid, I was pretty easy to please at backyard BBQs and cookouts. Hot dogs? Cheeseburgers? Potato salad? Okay, sure- fine. I just wanted to jump in the pool with my little pink floaties strapped around my arms so I would eat pretty much anything that was put in front of me just to hurry up and get it over with so I could move onto the swimming part of the day (after waiting 30 minutes post-meal, of course!)

But now that I’m an adult who loves to cook and experiment with flavors, textures, and colors on my plate- those old standbys just don’t do it for me anymore. I need some variety- even if I have to prepare it and bring it to the party myself!

I found this great nacho/dip alternative online a few days ago while searching for recipes for different and/or unique dishes to bring to an upcoming Summertime get together my friends are having this coming weekend. The use of cotija cheese, corn kernels and lime really caught my attention and I had a trial run with the recipe this past Saturday afternoon to make sure it tasted as good as it sounded (Spoiler Alert: It absolutely does!)

WHAT YOU’LL NEED:

  • 2 tablespoons unsalted butter
  • 1 white onion, minced
  • 3 garlic cloves, minced
  • 3 cups corn kernels (fresh or thawed)
  • 2 tablespoons all-purpose flour
  • ½ cup whole milk
  • ¼ cup heavy cream
  • 1½ cups shredded Monterey Jack cheese
  • Tortilla chips
  • ½ cup chopped fresh cilantro
  • ½ cup crumbled cotija cheese
  • ⅓ cup sour cream
  • ½ teaspoon cayenne pepper (or more as needed)
  • 2 limes, cut into wedges

READY? HERE’S WHAT YOU DO:

  1. In a medium pot, melt the butter over medium heat. Add the onion and sauté until tender, 4 to 5 minutes. Add the garlic and sauté until fragrant, 1 minute more.
  2. Add the corn and sauté for 2 to 3 minutes. Add the flour and cook, stirring constantly, for 1 minute.
  3. Add the milk and cream and bring to a simmer. Simmer for 3 to 4 minutes. Stir in the Monterey Jack cheese until it’s fully melted.
  4. Arrange the tortilla chips in an even layer on a platter, and pour the corn mixture evenly over it.
  5. Sprinkle the cilantro and cotija cheese evenly over the dip, and drizzle the sour cream across it. Sprinkle with cayenne pepper, then serve immediately with lime wedges.
  6. Sit back and bask in the glory of being the V.I.P. of the backyard BBQ!

The different cheeses, the cilantro, the corn and lime juice all blended really beautifully within this recipe- and the taste is a perfect mix of saltiness with just the right amount of sour for an extra tang on your tongue while you’re eating it. I shared this with family after preparing it and they enjoyed it just as much as I did- which is always a good sign!

The prep time for this dip is about 30-40 minutes- depending on how much of it you’re making- and it’s sure to be a hit at your next backyard BBQ, cookout, or beach party! I know I’m looking forward to making it (and eating it) again in the coming days!

All You Need Is Love…

I’m a straight woman who was fortunate enough to be raised and currently reside in Massachusetts. I say fortunate because Massachusetts- and most of New England, really- is one of the more liberal and progressive areas in the country. Our impressive list of schools and businesses bring in so many different people from all races, religions, cultures and orientations that my state is like a big mixing pot of never-ending educational and growing possibilities. If you spend any significant amount of time in any of the neighborhoods around Boston- you get to know some of the most incredible individuals and can learn so much from them at the same time.

So when Boston has it’s annual Pride celebration for our LGBTQ brothers and sisters, you know it’s going to be a fun time and that all are welcome with open arms- no matter what- compared to other areas of the country where homosexuality/bisexuality or being transgender is either not properly understood, accepted- or both. I’m grateful I get to be in a city that celebrates the variety of life instead of trying to suppress it or refuse to acknowledge it’s existence. People say a lot of things about Boston- some good and some not so good- but you can’t deny that we are a city that takes care of our residents and look out for one another.

I have a wonderful group of longtime friends from the LGBTQ community, and every year I like to meet up with them while they hop to and from multiple events around the city for the celebration. While I missed the parade this year due to a prior commitment- I was able to head down to Back Bay for a huge block party with plenty of drinks and dancing. The weather was absolutely perfect- so much that when our group eventually dispersed from the party, we were able to enjoy a delicious outdoor dinner in the shade at nearby TICO.

If you stop by, be sure to try their truffle guacamole and watermelon margaritas. You won’t regret it (and yes- that’s a side dish of macaroni and cheese. A girl has to get her carbs when she’s having a little bit of alcohol in the sunshine!) TICO is a bit on the pricier side for tapas- but it’s worth the splurge every now and then. I certainly don’t have any regrets- and the view from their outdoor patio where we were seated was pretty spectacular.

The party eventually made it’s way- and winded down- at Dillon’s on Boylston Street where we once again found ourselves lounging on an outdoor patio and sipping refreshing, chilled (and fairly strong) cocktails under the sunset. When more of our friends arrived from their own dinner reservations elsewhere around the city- we all started to head in different directions. Some friends went to a drag show in Cambridge, others went to a different bar, and I headed home to get some much needed rest after a busy day and an even busier work-week.

Exciting, I know- but I had a lot of stuff to get done and errands to run around Downtown Crossing on Sunday!

Speaking of getting things done- I’m headed off to the office for the day. Have a good Hump Day, everyone!
