Dinner For Two: 30-Minute Beef Stroganoff

Good Morning and Happy Monday, everyone!

As we an embark on this “week of love” with Galentines Day, Valentines Day, and the latest spin on the holiday- Palentines Day (falling on Wednesday, Thursday and Friday, respectively)– I thought it’d be fun to share some holiday-inspired posts throughout the next few days.

The first, and one of my favorites- is a super quick and easy recipe you can whip up with just a few ingredients and within a half hour to share with your love, your date, your lady-friends- or your friends in general before you light some candles and gather around to watch a romantic comedy together…

… Or whatever you do to celebrate these sorts of holidays (mine involves a little more beer and little more “Mystery Science Theater 3000”- but to each their own!)

WHAT YOU’LL NEED:

  • 1 stick unsalted butter, divided
  • 2 pounds beef tenderloin, halved lengthwise and cut into ½-inch strips
  • Kosher salt and freshly ground black pepper
  • 3 shallots, minced
  • 2 garlic cloves, minced
  • 1 quart button mushrooms, sliced
  • 1½ cups beef broth
  • 1½ tablespoons Dijon mustard
  • ½ cup sour cream
  • ¼ cup fresh chopped fresh parsley
  • 1 pound pappardelle (FYI – I used egg noodles this time around!)
  • ¼ cup chopped fresh dill

READY? HERE’S WHAT YOU DO:

  1. In a large pot, melt 3 tablespoons of the butter over medium heat. Season the beef with salt and pepper.
  2. Working in batches, add the beef to the pot in a single layer and sear until browned on both sides, about 1½ minutes per side. Transfer the beef to a plate.
  3. Add another 3 tablespoons of the butter to the pot and melt over medium heat. Add the shallots and garlic; sauté until fragrant, about 1 minute.
  4. Stir in the mushrooms and sauté until tender, about 5 minutes. Stir in the beef broth and the mustard. Bring to a simmer over medium-low heat.
  5. Simmer until the liquid reduces into a thick sauce and the mushrooms are very tender, 8 to 10 minutes.
  6. Stir in the beef and continue to simmer until the beef is tender, about 3 minutes. Stir in the sour cream and parsley.
  7. Bring a large pot of salted water to a boil and cook the pappardelle according to the package instructions. In a large bowl, toss the pappardelle with the remaining 2 tablespoons butter; season with salt and pepper.
  8. To serve, top the pappardelle with the beef stroganoff and dill.

Loaded with savory flavors and with each portion being filling and beyond satisfying- this dinner is a convenient and delicious spin on a favorite that typically takes a lot longer to prepare- making it perfect for busy Gal/Val/Palentines Day plans!

It’s a lot of fun to prepare together, too- so why not get your significant other or your friends in on the process with you? Cooking a meal together is a great bonding experience, after all!

“Love is a great beautifier…”

Good Morning and Happy Friday, everyone! We made it to another weekend (thank goodness!)

Today marks another later-than-usual afternoon post and what I hope will serve as the period or otherwise final punctuation mark on what has been a pretty busy week for me! I had mentioned it on Wednesday right before sharing my Mozzarella-Stuffed Pizza Bread/Super Bowl recipe, but the beginning of this week was packed with work (as usual,) the Patriots celebration parade, and my dear friend Duncan visiting from San Diego/Chicago while he was in town for a job interview and conference.

Additionally, shortly after receiving my car back last week following the repairs for the hit and run accident I had been involved in last month right before my birthday- I had to turn right back around and return my poor Hyundai to my mechanic again for unrelated brake repairs/replacement.

If I never have to drive a rental car again, it’ll be too soon!

I digress- as tired and sleepy as I am right now- I’m grateful that my car is fixed and that I’ve been able to stay active and productive- all things considered! I *definitely* earned the mani/pedi I’m going to treat myself to this weekend, though. At least that’s how I’m justifying it!

Despite a hectic schedule these past few days, I did manage to take some time for a relaxing day trip to picturesque Concord, Massachusetts- where I visited Louisa May Alcott’s house to scratch yet another historic New England location/landmark off of my 2019 travel bucket list!

I love historic homes, Concord in general, and “Little Women,” so to be able to learn more about all three and about a much beloved author from my state in the same place and at the same time was an exquisite way to spend an afternoon off.

Although photography inside the Alcott home is prohibited given how old some of the artwork and relics are- photos of the exterior are encouraged and I was able to get the loveliest pictures just as the sun was starting to set.

Now that things seem to thankfully be calming down and returning to normal (someone, anyone reading this right now knock on wood for me, please!) I can try to relax and focus on the evening and days ahead. I’m having dinner with my family tonight as part of our planned bi-weekly get-togethers- and next week is all about Gal-entine’s Day, Valentine’s Day- and my latest take on the celebrations- Pal-entine’s Day (for your pals, of course!)

I’ll have a recipe for a romantic dinner fit for two you can cook up in 30 minutes or less to share, a look at one of my favorite holiday-appropriate-but-still-casual date night outfits- and some photos from planned weekend travel and day trips I have coming up within the next 48 hours!

But for now, I’m off to eat a quick lunch and head back to work and meetings for a couple more hours.

Super Bowl Snacks: Mozzarella-Stuffed Pizza Bread

Good Afternoon and Happy “Hump Day,” everyone!

Today’s post is coming at you all a little later on in the day than usual- but with a Patriot’s Parade, work and friends visiting from California- the past couple of days have been a little crazy!

I’m still riding the post-Super Bowl celebration high right now- which is why I’m sharing a dish that I particularly love to make during football season- but can also really be prepared and served any time of year! Pizza dishes are appropriate year-round- on any day, occasion, party, etc.

This cheese-stuffed pizza dough takes just over an our to prepare, cook and serve- and about two minutes to eat (or one minute, if you’re like me…)

WHAT YOU’LL NEED:

  • 1 pound pizza dough
  • 1 large egg
  • 12 ounces finely diced fresh mozzarella
  • 1 tablespoon chopped fresh oregano
  • Freshly ground black pepper
  • ½ cup sun-dried tomato pesto (store-bought or homemade)
  • 2 tablespoons extra-virgin olive oil, divided
  • ⅓ cup finely grated Parmesan cheese Fresh basil, for serving

READY? HERE’S WHAT YOU DO:

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. On a lightly floured surface, roll out the dough into a 4-by-14-inch rectangle. Cut the dough in half lengthwise. In a small bowl, whisk the egg with 1 tablespoon water until combined.
  3. Sprinkle the mozzarella down the length of one piece of the dough in an even layer. Sprinkle the oregano and pepper evenly over the cheese. Use a pastry brush to brush the egg wash around the perimeter of the other piece of dough. Stack the pieces of dough, pressing firmly around the edges to seal and encase the cheese.
  4. Use a spoon to spread a line of pesto, about 1 inch thick, all the way down the length of the dough.
  5. Gently pick up the dough and twist down the length of it so that the pesto looks swirled. Transfer the dough to the baking sheet and coil it into a tight spiral.
  6. Brush the dough with the olive oil, cover with plastic wrap and let rise for 20 minutes.
  7. Sprinkle the Parmesan onto the dough and then bake until very golden brown, 20 to 25 minutes. 8. Serve immediately, garnished with basil.

Amid the nachos, French fries, chicken wings, chips & dip, sliders and beer- this “Pizza Bread” was definitely a hit and went pretty fast! I also made sure to serve it alongside small bowls of marinara sauce and ranch dressing- since those are the mandatory Super Bowl side-sauces, after all!

And, of course- no Super Bowl party is complete without properly representing your team. Luckily, I had plenty of Patriots plates/cups on standby for the occasion! There’s still some left over, too- so maybe I can break it out again for next year’s Super Bowl!

A girl can hope, right?

Living Coral – Pantone 2019

Good Morning and Happy Monday, everyone!

I am admittedly off to a bit of a late start today, what with last night’s Super Bowl and all. A tense game and a pleasantly surprising Patriots’ victory usually calls for a groggy Monday- and now I’m getting ready to (attempt) to get some stuff done at my office today and figure out a way to carpool over to tomorrow’s Victory/Celebration Parade that’s been scheduled in the city!

Before I do that, though- I wanted to talk about incorporating colors into my Winter look. Not just any colors, of course- but Pantone’s 2019 ‘Color of The Year.’ Every year, Pantone announces what color they anticipate will be the big sensation in the following months. From electric purples, “Millennial” pinks, to rich greens- it’s always been fun finding ways to embrace the designated shade in makeup, fashion, accessories and home decor and seeing how other bloggers, designers and influencers are embracing it.

This year’s color, though- may be one of my favorites. 16-1546- or “Living Coral” as it’s being called- is a bright, Summery combination of pink/orange that was one of my favorite tones to wear long before it was thrust into the spotlight- and I’ve been predominantly featuring it in my makeup this Winter to brighten up what is otherwise a neutral and darker-shaded canvas in my clothing and accessories.

Why? Because it pops!

And I’d like to share how I manage to do it- for under $30.

There are certain makeup brands I love for sure- Fenty, Tarte, and Urban Decay come to mind almost immediately- but sometimes I feel people sleep on Sephora’s own line of cosmetics which are just as pigmented and just as high quality as other brands you’d find within the store for a fraction of the price. When I’m in need of color but don’t want to break the bank- I turn to them!

For example, their ‘Blush Me’ cream blushes go on smoothly, and are easy to blend with your fingertips to a powdery and long-lasting finish. This shade, ‘All Smiles’, is a $5 way to achieve a ‘Living Coral’ flush!

For my eyes- I keep it simple- usually sticking to one universally flattering shade to blend onto my lid and into my crease before I finish it off with a couple of swipes of lengthening and thickening mascara. Again, Sephora comes through in a clutch with their Colorful Eyeshadow Singles ($8) in ‘Cherry Blossom’- which sets as a beautiful pink/gold on my lids and is flattering to every skin tone.

I’m so in love with this color and I think it’s perfect for any season!

Finally, I finish things off with a bold lip (my specialty!) and to truly bring out my passion for ‘Living Coral’- I turn to Sephora yet again and their LipStories lipstick line. This shade, ‘a satin finish called ‘Hot in Havana’- may look like a super rich orange- but once applied and blotted out (or, if you prefer- finished with a clear or pink gloss)– is a beautiful coral color that pulls everything together and completes this Pantone-inspired look!

Best of all? The lipstick is also only $8 and is just as long-lasting, hydrating and pigmented as other brands that are triple that price!

When all is said and done- this ‘Living Coral’ look- splashed against the backdrop of my black, gray, brown and dark green wardrobe this time of year- makes me look bright, cheerful, and even maybe like I’m preparing to jet set off to a tropical destination to beat the Winter blues.

Of course, ‘Living Coral’ isn’t just limited to my makeup right now. I’ve also been sporting a bright and fun manicure courtesy of Butter London- who paired up with Pantone to develop a limited edition line of nail polishes inspired by this year’s ‘Color of The Year’. January 2019: In a Nutshell

Good Afternoon and Happy Thursday, everyone!

I’m absolutely floored that today is the last day of January and we’re going right into Valentines season come tomorrow! It feels like it was only just yesterday I was sipping champagne in NYC and bidding a fond farewell to 2018- and now one month has already come and gone in the blink of an eye!

I suppose January can go either way, though. For a lot of people- it seems to drag on for an eternity (maybe because of the cold and the snow and the post-holiday blues?) and for others, like me- who are so pumped up for a new year and new goals/aspirations- it goes by really, really quickly while we’re scrambling to accomplish so much all at once!

That’s not to say I didn’t get to stop and enjoy myself, of course. As busy as it was- January was certainly a pretty interesting start to 2019!

As I said earlier, January kicked off with a brisk couple of days in New York City where I rang in the New Year in comfort and style (and with a really amazing view of the skyline) to start things off on a good, exciting note. I took in views from the top of Rockefeller Center and ate some delicious food around the Lower East Side.

From there, my days (and particularly my weekends) were all about spending time outdoors- including during our most recent snowstorms/blizzards, torrential downpours and a Super Wolf Blood Moon- and catching great indoor shows around Boston with local bands and at awesome breweries.

I spent a lot of time with friends and family this past month- particularly around both my own birthday and my best friend’s birthday- which are right on top of each other. I was surprised with cakes, presents, and impromptu spa treatments- which definitely came in handy following the one low point from this past month when I was hit in my car by a distracted driver that then fled the scene just a couple of weeks ago.

I finally get my car back tomorrow, though- so February is already looking promising!

Most recently, I began closing out this month at my friend Phill’s annual ‘Royal Rumble’ themed party in Salem on Sunday night- which was absolutely hilarious and fun. The snacks our circle of WWE fans come up with are brilliant- bordering on insane- but in the best way possible. I dress up for every event- and given that it was pretty chilly out and wearing spandex shorts was not something I was particularly eager to do given that hypothermia would have been imminent- I donned a rainbow wig and a mask and went as Asuka!

January was also the month I got seriously organized- which has been really beneficial and has definitely de-stressed and de-cluttered my life in such a brief amount of time. I’m taking on so many new and exciting projects in 2019- some of which I’ve already started working on- so staying on top of my game is something I’m hoping to carry over into February and the months that follow.

Speaking of February- even though it’s the shortest month of the year- I have so much planned! This weekend is the Super Bowl (Go Pats!) where I’ll be eating all the wrong kinds of snacks for what will undoubtedly be the biggest “cheat day” of the year. My BFF from San Diego-Now-Chicago will be in town for the Chinese/Lunar New Year, I’m looking to do some more traveling and participate in more photography opportunities in the coming weeks- and I have a few really fun, inspired posts to share, too!

My posting schedule will return to it’s usual Monday, Wednesday and Friday routine next week- but for now I’m going to call it a night, go play some ‘Resident Evil 2’, and get ready for Friday and the weekend!
